The Madrid itinerary was locked in early, but Sacha only opened up for booking as the trip got close. Remembered it sitting on the wishlist right before we left — glad we didn’t miss this hidden gem.
It’s a small restaurant with real character and genuinely good food — classic, easygoing, with a touch of old-money, old-world charm. There’s a foundation of Spanish Catalan cooking, the precision of French technique, and the ease of a neighborhood wine bar. By midday, every table was already pleasantly buzzed.
It feels more like someone’s own private dining room than a restaurant chasing culinary or cultural statement-making — the real goal here seems to just be good food, eaten comfortably.
Dishes came out fast, and the first one already impressed.
🦀 Falsa lasaña de txangurro, a seafood pasta with a light French structure. The crab brings intense sea flavor and umami, its aroma rushing straight to the head, while the pasta itself stays as light as a rice noodle roll.
🐂 Tuétano asado, roasted bone marrow with beef. Sacha’s signature dish, and the kind of combination that’s impossible to forget once you’ve had it. The marrow has a jelly-like texture, layered onto bread together with impossibly tender beef and a generous amount of beef jus. Layers of dairy richness unfold, along with deep meaty aroma, plus crunch, softness, and real bite. Pure, direct, and rich all at once.
🥗 We ordered a leafy green dish in the middle to cleanse the palate — wrapped in olive oil, with plenty of fresh, clean flavor.
🍫 Postre de chocolate — dessert wasn’t phoned in either. Soft, delicate, richly aromatic chocolate paired with lemon condensed milk, just right.
Exactly the kind of ideal hidden gem: simple plating, but every single dish genuinely delicious once it hits your mouth. Already want to go back again and again.
